The chromium content of stainless steel is around 10-11%. When stainless steel mixing heads are exposed to air, the chromium in stainless steel forms a chromium oxide film on the surface of the mixing head. This film is passive and non-toxic, and most importantly, it prevents rusting by keeping the stainless steel product isolated from air and moisture. Even if the flat mixing head is scratched, the chromium oxide will re-form seamlessly.
This property eliminates the need to worry about it rusting. It is also non-reactive, unlike aluminum and iron, so we can use it to mix acidic foods.
